Today did not exactly turn out as expected. The only part of my evening that was as planned was my dinner. We just ended up eating it a little later than originally expected.
First, my co-worker mentioned to me that my eye was very red. I didn’t think anything of it, and continued about my day. Then this afternoon she said it looked even more red. So at that point, I went to the bathroom to take a look, and yes it was very red. Then other people started talking about it, so I decided to call and see if I could get into see the doctor. He was able to see me at 6:30, but didn’t take me until after 7. Anyway, he said I have atypical conjunctivitis, which is basically just any eye infection, but it’s a little different than what he normally sees. He is a little concerned about it, so if it’s not better by Thursday I may have to see an optomologist because of my Celiac disease, he’s afraid it could be something related to that. We will have to see. For now though, I’m taking eye drops and hopefully the redness will go away.
Since the doctor and pharmacy took much longer than expected and cut right into my exercise time, I was not able to run tonight. I guess it’s good I had planned to go to the gym tomorrow night. We had a new concoction for us tonight. It was Ground Turkey Stuffed Peppers. This is my pepper. Here’s how I made it.
Ground extra lean turkey
1 red pepper
1/2 cup small tomatoes
garlic powder, chili powder, cumin, italian seasoning, crushed red pepper flakes all to taste
Grated cheese of your liking; I used lite mexican cheese from Trader Joe’s and part skim mozzarella
3 green peppers; I had enough turkey for at least 4 peppers
First i sauteed the onion, mushroom, and red pepper in a pan. Once they were mostly cooked; about 5 minutes in the pot. I put the mixture on a plate and began cooking the ground turkey. While the turkey cooked, I added all of the seasonings. Once the turkey was cooked, I added the onion, mushroom, pepper mixture back to the pan, and cooked it until all the flavors had blended together. Then I took the green peppers that had already been sliced and had the seeds removed from the inside while I was chopping earlier, and filled each pepper with the mixture. I baked the peppers at 400 for about 10 minutes and then topped my pepper with the cheese since the husband isn’t a cheese lover on things of this nature. Here are all three peppers. Once the cheese was on top of my pepper, I cooked these for another 10 minutes and then it was time to eat. I served this with yummy corn. Let’s hope that I wake up tomorrow morning and my eye is back to normal. Have a good night!
