Sorry for the lack of posts over the past few days. We are getting ready to go on vacation, and of course I am the busiest I’ve been in weeks just trying to get ready. This is the longest I’ve gone without posting since this blog began. So for your viewing and reading pleasure, here are some of the things I’ve been eating and doing over the last few days.
Friday Night Dinner
Egg scramble with asparagus, spinach, and zucchini along with very well done hashbrowns.
This event was held in Rye, NY and included a 2 or 4 mile walk, a vendor fair, cupcake decorating, and a presentation on Celiac Disease by Dr. Christina Tennyson from the Celiac Disease Center at Columbia University. This walk was started by a teenager who suffers from Celiac disease, and I can’t tell you how smoothly everything ran and how nice it was even though it was freezing and raining the whole day. My friends Jen and Audra came with me. Here’s some images from the day.
Sunday night’s dinner: Trader Joe’s Treat
Very Yummy and Filling - Shrimp Spring Rolls - Near Sushi Section at TJ's
Monday night I cooked a really yummy dinner including chicken sausage
. Since this is apple flavored, I decided to cut up two small gala apples along with a red and yellow pepper to toss in with the sausage. I had never tried this flavor, and it turned out really good. We cooked it for 30 minutes on 400.
On the side we had this bag of greens from TJ’s.
I simply sauteed this with olive oil, garlic, onion flakes, italian seasoning, salt, and pepper. This was delicious too.
And for a nice nutritious carb, we had rice.
