Homemade Cranberry Sauce

The star of tonight’s dinner was this.DSC01678  I completely created my dinner around cranberry sauce that I made yesterday.  I’ve never made my own cranberry sauce before, and I would change a few things, but it still was very good.  Along with the sauce I hadDSC01705 this plate of food.  It included a roasted potato medley, broccoli rabe, and baked chicken topped with the infamous cranberry sauce.

I mainly used three seasonings tonight in all of the food except for the cranberries.  Garlic, paprika, pepper, and salt were included on both the chicken and potatoes.  The broccoli rabe had garlic, salt, and pepper.

In order to make the chicken, I started with the four mentioned seasonings and mixed them together in a bowl and added a little water to make a paste.DSC01700

 

 

 

 

 

 

 This is the simplest seasoning for chicken and it is very flavorful.  Since I wanted to top the chicken with the cranberries, I didn’t want anything really overpowering.  I simply rubbed the chicken with the paste and turned it half way through cooking and rubbed the other side with the paste.DSC01701  I continued to flip the chicken until it was done to my liking.  I like my chicken a little more done than others.

For the potatoes, I used a bag of mini red, purple, and yukon gold potatoes and sliced them into chips.  I also chopped one onion.  I put the potatoes and the onion on a foil lined baking sheet sprayed with olive oil spray, and topped the mixture with the same four seasonings as the chicken.  I cooked this at 400 for about 45 minutes.  I turned the potatoes many times while cooking to make sure they got nice and crispy.  Here are before and after pictures.DSC01699DSC01702

 

 

 

 

 

 

Now for the broccoli rabe, I added about a teaspoon of olive oil to the pan and heated two cloves of minced garlic.  Then I added in the broccoli rabe and cooked while continuously mixing until cooked.  I added pepper and salt towards the end.  The broccoli rabe was a little bitter.  I will have to work on that next time.  Maybe I should blanch it first.DSC01704

 

 

 

 

 

 

For the cranberry sauce, I used one bag of ocean spray cranberries and put them in a pot with 1 cup of water, 1/2 cup sugar, and some cinnamon.   I brought this mixture to a boil and then cooked it on a low temperature while the sauce simmered and the berries burst.  I then poured it into a tupperware dish to cool, and then put it in the fridge.  I wanted to use as little sugar as possible, but I do think it could have used a little bit more.  I also think next time I will cook it a little longer. 

Now it’s time to watch DVRd 90210.  I am still hooked, I can’t help it.  Have a good night!
