Eggplant, Brussel Sprouts and Spaghetti Squash

When I went grocery shopping on Sunday, I knew that Mike had a hockey game tonight, so usually the nights he has hockey are the nights I eat what I’m in the mood for.  Basically, Mike hates brussel sprouts and could live without eggplant.  He used to eat eggplant with me when we first started dating just because he knew I liked it, but he never told me he really didn’t like it until several months into our relationship.  The spaghetti squash he would eat though, and I’m sure he will be since there is so much leftover.

Here’s the hodgepodge of my veggie dinner.DSC01577DSC01580DSC01578  Along with this veggie grouping, I had a small serving of the leftover turkey meat mixture from last night’s dinner.  Everything went into the oven at some point.  First, I sliced the eggplant and put it on a foil lined pan sprayed with olive oil spray.  I sprinkled garlic powder and salt on it and baked it for about 20 minutes flipping once.  I like my eggplant to be crisp.  This will go great in a wrap or salad for tomorrow’s lunch.  Then I placed the brussel sprouts on another foil lined pan sprayed with olive oil spray and sprinkled salt and pepper on top.  Then for the spaghetti squash, I first cooked it for almost 9 minutes in the microwave to soften it.  Once it was soft enough, but not cooked all the way through, I cut the squash in half.DSC01574  Then I took all the seeds out.  Has anyone ever tried to use the seeds for anything like you can with pumpkin seeds?  Then I took a pyrex dish and filled it with water about an inch high.  Then I placed the squash, cut side down into the water, and continued cooking it in the oven for another 20 minutes.  Once it was cooked through, I used a fork to scrape the skin and make the string like pieces.  This squash made a lot of spaghetti.  We will probably be eating this for a few days.  Here’s the scraped out squash.DSC01579  This is a really easy process, and the squash is really yummy.  Especially if it’s a little sweet.  This dinner was just what I was craving, and I still have lots of veggies leftover to use in other meals.

I think my eye is doing much better since yesterday.  Now i know there was no reason for me to be alarmed.  I’m going to continue with my drops and hopefully when I wake up tomorrow, my eye will be completely back to normal.
